Brunch: Southern Grits

My husband loves my Southern Grits, so today, I'm going to make it for brunch. In addition, I'm serving scrambled eggs and whole wheat toast. Yum!

Eliminating Sugar For a Week! No Problem!

During my phone session with Leslie, we decided that I pick an item to eliminate from my diet, for a week, and continue to journal about how my body felt. Choices were sugar or dairy. I decided on sugar.

After all, I don't, as a habit, drink sugar beverages or add sugar to my coffee or tea. Lately I haven't even been baking so why not give it a go?!

No sooner then I hang up the phone here comes our son, from work, with a quart of ice cream! Gesh! This is going to be tough!

Cleaning Our Iron With Vinegar and Baking Soda~It Works!

If you've been following my blog for awhile then you know that I like to clean with natural products. So when my husband brought me the iron this morning with these nasty stains I went online for some help!

I heated up my iron, used a baking soda and vinegar paste and started rubbing the stain, in a circular motion. Make sure to have enough towel between your fingers and the hot iron!

After all the stains were gone I wiped the residue off with clean water and the clean part of the old towel. Minutes later, I have a shiny, clean iron!

Cheap Korean Beef With Brown Rice: My Short-On-Time Dinner Recipe

When I'm short on time and still need to make dinner this is my go-to recipe. What's your go-to recipe?

Korean Beef with Brown Rice

1 pound lean ground beef
1/4 - 1/2 cup brown sugar
1/4 cup soy sauce (I use low-sodium)
1 Tablespoon sesame oil
3 cloves garlic, minced
1/2 teaspoon fresh ginger, minced
1/2 - 1 teaspoon crushed red peppers (to desired spiciness)
salt and pepper
1 bunch green onions, diced (don't skip this!)

Heat a large skillet over medium heat and brown hamburger with garlic in the sesame oil. Drain most of the fat and add brown sugar, soy sauce, ginger, salt and pepper and red peppers. Simmer for a few minutes to blend the flavors. Serve over steamed rice and top with green onions.

Menu Plan Monday ~ May 13, 2013

It's going to be hot in Vegas this week. We're talking 100 degrees so I'm looking for quick meals that won't heat up my kitchen. This week's recipes come from eMeals, Pinterest and Woman's Day.

My part time job didn't work out but I'm definitely okay about it. The job is much more mentally demanding and I'm just not physically up to it. (still suffering from muscle spasms) As I always remind our son, "Listen to your inner voice"!
